Michael Moldauer
I am a Swiss-Peruvian, born in Geneva, with nearly 20 years of experience in the Food and Beverage (F&B) industry. After graduating from École Hôtelière de Lausanne (EHL), I made the bold decision to journey to Peru and immerse myself in its burgeoning gastronomic scene. My professional journey began alongside chef Gaston Acurio. Fueled by my passion for innovation and entrepreneurship, I ventured into building my own company. Today, I proudly serve as the co-founder of Mercado 28, Peru's premier Foodhall company. My commitment extends beyond entrepreneurial pursuits. Since 2019, I have dedicated considerable time to mentoring and empowering aspiring food entrepreneurs at the Centrum PUCP a prestigious postgraduate university in Lima, and most recently, I launched Peru's first food business incubator and accelerator: PERU FOOD LAB.
